This is not your ordinary holiday green bean casserole. This is the one my Mom made. I didn’t even know about the other green bean casserole until I was an adult, and have always preferred this one.
Mama's Green Bean Casserole

Equipment
- Pre-heat oven to 350℉
Ingredients
- 2 tbsp butter
- 2 tbsp flour
- 1/2 tsp salt
- 1 tsp sugar
- 1 tsp onion powder
- 1 pint sour cream
- 4-6 cans french-style green beans, well drained (four cans fit into an 8x8 and six cans fit into a 7x11 baking dish)
- 1 cup cheddar cheese, shredded
Topping
- 1/2 bag +/- of potato chips, crushed
- OR
- 1/4 cup butter
- 1/2 pkg saltine crackers, crumbed
Instructions
- Melt butter in saucepan. Add next four ingredients, stirring constantly, until browned.
- Remove from heat and stir in sour cream until smooth.
- Add green beans and stir to coat.
- Place in baking dish and top with cheese.
- Place potato chips on top of cheese...
- OR melt butter in saucepan and add cracker crumbs, stir over medium heat until crackers have browned slightly. Place on top of cheese.
