This is not your ordinary holiday green bean casserole. This is the one my Mom made. I didn’t even know about the other green bean casserole until I was an adult, and have always preferred this one.

Mama's Green Bean Casserole

This is not YOUR Mama's Green Bean Casserole. This is the Green Bean Casserole that I grew up with. I did not know that there was a universal, holiday green bean casserole consumed by the masses until I was an adult. By then it was too late. The one my Mama made had imprinted on my soul. To make it gluten free I use Bob's Red Mill Gluten Free 1 to 1 Baking Flour for the flour and the potato chip topping option.

Equipment

  • Pre-heat oven to 350℉

Ingredients
  

  • 2 tbsp butter
  • 2 tbsp flour
  • 1/2 tsp salt
  • 1 tsp sugar
  • 1 tsp onion powder
  • 1 pint sour cream
  • 6 cans french-style green beans, well drained
  • 1 cup cheddar cheese, shredded

Topping

  • 1/2 bag +/- of potato chips, crushed
  • OR
  • 1/4 cup butter
  • 1/2 sleeve saltine crackers, crushed

Instructions
 

  • Melt butter in saucepan. Add next four ingredients, stirring constantly, until browned.
  • Remove from heat and stir in sour cream until smooth.
  • Add green beans and stir to coat.
  • Place in baking dish and top with cheese.
  • Sprinkle potato chips evenly on top of cheese...
  • OR melt butter in saucepan and add cracker crumbs, stir over medium heat until crackers have browned slightly. Sprinkle evenly on top of cheese.

Bake, uncovered, 20 minutes or until bubbly
