This is a one dish meal. I love to gift it to someone who is in need of a helping hand for dinner.

Chicken Casserole

  • Pre-heat oven to 350℉
  • 9X13 baking dish


  • 3 chicken breasts, cooked and coarsely chopped
  • 1-6 oz package Uncle Ben's original long grain and wild rice, prepared
  • 2 cups fresh green beans
  • 1 cup mushrooms, sliced
  • 1 medium onion, diced
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 cup sharp cheddar cheese, shredded
  • 4 oz pimiento, drained
  • 8 oz can water chestnuts, drained and chopped


  • Wash and steam green beans until crisp.
  • Saute onions and mushrooms.
  • Mix all ingredients together.

Spread in 9x13 baking dish. Cook, uncovered, for 25 minutes or until bubbly
